When choosing a pet, decide what you want it to do, choose all the pets that do this, then choose the one among these whos apprearance you like best. Stats are useful, but you'll never have one of tthe best pets unless you fed loads of books, I mean hundreds, maybe even thousands of them, and when you spending this much on books the occasional +4 instead of +0 on a stat makes no noticeable difference, so appearance is everything.
Also, look at the pets final form, does it lose a skill by becoming mountable? Is it just less cute? Sometimes evolving pets is not the answer, remember, stats are negligible, appearance is everything.
